bbq sauce for pulled pork

I was hungry for pulled pork -- and for pulled pork close to North Carolina style. Here's what I came up with by combining a couple different recipes:

1/3 c vinegar  (2/3 c was too much)
1/3 c ketchup
2 T water
1 t Tabasco sauce
1 t Worcestershire sauce
1 T ground pepper
1 T salt
1/4 t dry mustard
1/2 t garlic powder
1 t brown sugar

Combine all. Add to cooked shredded pork (had about 1 1/2 pounds left-over cooked pork). Cook in oven over medium heat.

Broccoli Rice Casserole

Place
  • 1 T butter, and
  • 1/2 c chopped onion
in a 1 to 1 1/2-qt casserole. Microwave on high for 1 min. Add
  • 1 c uncooked rice.
Stir to coat rice. Microwave on high for about 1 min. Add
  • water (plus, if desired, 1/4 c chicken broth)
to cover. Add (in layers)
  • 1 to 2 c chopped broccoli,
  • 1 c shredded cheese (I used cheddar cheese.), and
  • 1 can cream-of-celery (or cream-of-mushroom) soup.
Do not stir. Cover. Bake at 350F for at least 30 min.

banana bread

Banana Bread
(one of my favorites -- has almond meal instead of chopped nuts)
(Almond meal replaces part of the flour.)

1/2 c sugar
1/6 c shortening (2 T + 2 t)
1 egg
1 c mashed banana (about 2 bananas)
1 c flour
1/2 c almond meal
1 t soda
1/4 t salt
1/4 c milk

Grease loaf pan. Preheat over to 350F.
Combine flour, almond meal, soda, and salt.
In a separate bowl, cream sugar and shortening. Add egg and beat. Add banana and beat.
Add half of flour mixture. Beat. Add milk. Beat. Add rest of flour mixture. Add more milk if necessary.
Pour into loaf pan and bake 55 - 65 minutes at 350F. (makes 1 loaf)
